Raspberry and Peach Yogurt Parfait

2 1/2 cup Greek yogurt, plain, fat-free (divided)
1 cup Frozen raspberries, unsweetened (thawed; or fresh)
1/2 tsp Cinnamon
1/2 tsp Vanilla extract, pure
1 cup slices Peaches, frozen (thawed; or canned, sliced, packed in their own juice)

Instructions


  1. In a food processor or blender, process 1 1/2 cups of the yogurt with the raspberries for 15 to 20 seconds, or until the mixture is smooth, stopping to scrape the sides as needed. 
  2. In a small bowl, stir together the remaining 1 cup yogurt, cinnamon, and vanilla until combined. 
  3. To serve, layer as follows into a clear glass cup: 2 tablespoons peaches, 1/4 cup raspberry yogurt mixture, 1/4 cup plain yogurt mixture, 1/4 cup raspberry yogurt mixture, and 2 tablespoons peaches.

Notes:

Texture Modifications for Stroke Recovery:

Puree: Do not layerIn a food processor or blender, process all the ingredients until smooth. There should be no separation of liquid.

Minced: Using a knife, mince the peaches into pieces small enough to fit between the tines of a fork. Layering is optional. 

Soft and Bite-Size: Using a knife, cut the fruit into pieces no bigger than the size of your thumbnail and layer as directed.
