Ingredients


3 cup diced Rhubarb
1/2 cup Swerve Sweetener, granular (plus a bit extra for rhubarb)
1 1/2 cup Almond Flour
1 1/2 cup Sunflower seed flour, partially defatted (or more almond flour)
1/3 cup Whey protein powder, isolate, unflavoured
2 tsp Baking powder
1/4 tsp Salt
1/2 cup Olive Oil, Extra Virgin
3 large Egg
1/4 cup Almond milk, unsweetened (unsweetened)
1 tsp Vanilla extract, pure
1/4 cup Sunflower seeds (TOPPING)
2 tbsp Pecans (TOPPING)
1 tbsp Swerve Sweetener, granular (TOPPING (brown sugar if possible))
1 tbsp Butter, unsalted (TOPPING (room temperature))

Instructions


  1. In a medium bowl, toss together the sliced rhubarb and 2 tablespoons of the sweetener. Set aside.
  2. Preheat the oven to 350F and put muffin papers in the pan or grease the pan.
  3. In a medium bowl, whisk together the almond flour, sunflower seed flour, remaining 1/2 cup of sweetener, whey protein powder, baking powder, and salt.
  4. Stir in the olive oil, eggs, almond milk, and vanilla extract until well combined. Stir in the chopped rhubarb.
  5. Portion the batter using an ice cream scoop (fill about 3/4 full). 

TO MAKE THE CRUMB TOPPING:

  1. Combine the crumb topping ingredients in a blender or food processor or pulse until it resembles coarse crumbs. Sprinkle the crumb topping over teach cupcake.
  2. Bake for 20 to 25 minutes, until the edges are golden brown and a toothpick comes out clean. Remove and let cool.
