Rice Cakes with Hummus and Roasted Tomatoes

Ingredients


1/4 cup Cherry Tomatoes (halved))
1 pinch Salt
1 dash Black pepper
2 cake Rice cakes, crackers (include mini rice cakes) (any flavour (sundried tomato is best for this))
3 tbsp Hummus (1.5 on each cake)
1/4 avocado(s) Avocado
2 tbsp Alfalfa sprouts

Instructions


  1. In a frying pan/skillet, throw in the tomatoes. Season them with salt, pepper and oregano and roast them for a minute or two or until ready. Don’t over-cook them.
  2. Meanwhile: Spread a generous layer of hummus over the rice cakes. Top them with avocado and sprouts.
  3. Finally, add roasted tomatoes (or serve them alongside the rice cakes).
  4. Serve for breakfast/lunch/afternoon snack.
