There is no better way to start your day than with a beautiful breakfast board with all the fixings; it is such a creative way to serve breakfast or brunch!
Ingredients
12 large (3.5cm dia)
Strawberries

Maple syrup, pure
(in a pouring receptacle)

Greek yogurt, plain, fat-free
(enough for 1 tbsp per pancake, optional)

Peanut butter, smooth
(enough for 1 tbsp per pancake, optional)
3/4 cup
Dark chocolate chips
(to sprinkle on top, optional)
12 medium slice
Bacon
(reduced fat and salt, if possible)
12 large
Egg
(scrambled)
12 pancake (10.2cm dia)
Homemade plain pancake
(whole wheat, if possible)
Instructions
Washing and slice the fruit to have it ready to put on the board first. You can also set out the maple syrup greek yogurt, peanut butter, and chocolate chips at this time.
Preheat the oven to 400°F (205oC), and line a large baking sheet with foil. Lay bacon strips in a single layer on the baking sheet. Do not let them overlap or the strips will stick together. Bake for 15-20 minutes, or until the bacon is crispy, but not burnt. When the bacon is finished baking, drain the bacon slices on a paper towel-lined plate.
While the bacon is baking, make the pancakes according to package instructions, or from scratch using one of Meal Garden's many pancake recipes.
Once the bacon has finished baking, turn the oven down to 200°F. Keep the baked bacon and cooked pancakes in the warm oven while you scramble the eggs and start arranging everything on the board.
Use a 20″x15″ board and start by putting the fruit, maple syrup, greek yogurt, peanut butter, and chocolate chips on the right side of the board (use small serving dishes for added appeal). Arrange the cooked pancakes down the center for the board. Finish by placing the baked bacon and scrambled eggs on the left side of the board.
Serve immediately while everything is warm. Enjoy!

Protein
If you like your bacon extra crispy, put a metal cooling rack inside the baking sheet. Elevating the bacon allows the strips to cook from all sides.
Swap pork bacon for Turkey bacon for lower-fat option
Switch out the bacon and eggs for plant-based bacon and scrambled tofu, and nix the yogurt to make a vegan breakfast board.
Grains
Don't feel restricted to just pancakes. This breakfast board can also be created using French toast, waffles, or crepes...or a combination!
Fruit
The sky is the limit when it comes to fruit options, try raspberries and blackberries, apple and pear slices, peaches, diced mango, pineapple and kiwi, or pieces of melon and cantaloupe.
