Roasted Vegetable and Black Bean Tacos

Ingredients


1 medium Summer squash (diced)
1 medium Zucchini (diced)
1 small Yellow onion (chopped)
1 medium pepper(s) Red bell pepper (diced)
1 medium potato Sweet potato (peeled and diced)
2 tbsp Olive Oil, Extra Virgin
1/2 tsp Kosher salt (to taste)
1/2 tsp Black pepper (to taste)
1 can (15oz) Black beans, canned (drained and rinsed)
284 gm Rotel Chunky Tomatoes with Green Chilis
1 tsp Cumin (ground)
1/2 tsp Paprika, smoked
1/2 tsp Garlic powder
1/2 tsp Oregano, dried
12 medium tortilla(s) Tortilla, corn

Instructions


  1. Preheat the oven to 425F (220C). Line a baking sheet with parchment paper and set it aside.
  2. In a large bowl, toss together the summer squash, zucchini, yellow onion, red bell pepper, sweet potato, and olive oil. Place the vegetables in an even layer on the baking sheet and sprinkle with salt and pepper. 
  3. Roast the vegetables in the oven for 15 minutes. Stir, then roast for another 15 minutes. Stir again, and roast for another 15 minutes, for 45 minutes in total.
  4. While waiting, heat the black beans and tomatoes over low heat in a large skillet. Mix in the cumin, smoked paprika, garlic powder, and oregano. 
  5. Once the vegetables are finished roasting, stir the vegetables into the skillet with the black beans and tomatoes to combine.
  6. Add the hot vegetable and bean mixture into the corn tortillas to assemble the tacos. Makes 12 tacos.

Notes:

 Tips

  • Can substitute the sweet potatoes for white potatoes or yam
  • Can serve with guacamole on the side.
