2/3 cup Cassava flour
1/3 cup Tapioca starch (or arrowroot starch)
1/2 cup Coconut oil (or ghee if tolerated)
1/4 cup Maple syrup (or honey)
1/4 tsp Salt
1 tsp Cinnamon (optional)
1 tbsp Gelatin dry powder, unsweetened (grassfed; (sub agar-agar or omit for vegan))

Instructions


  1. Mix all the ingredients together with a fork/pastry blender until they reach a large crumble consistency; add the gelatin last (do NOT bloom it).
  2. Press into a loaf pan or an 8x8 round pan.
  3. Bake for 25-30 minutes at 350 degrees Fahrenheit. While cooling, poke decorative holes with a chopstick.
  4. Go ahead and put these out for Santa, but be aware that he will likely eat them all and leave none for you.
