Sausage Chard Rigatoni

Kids will love the combination of sausage, pasta and mellow, sweet Swiss chard. It's easy enough to make on a weeknight.

Ingredients


4 tsp Olive Oil, Extra Virgin
3 link Italian pork sausage (casings removed)
3 clove(s) Garlic (minced.)
1/2 tsp Hot pepper (chili) flakes
1 can(s) (28oz) Diced tomatoes, canned (low sodium )
1/4 cup Basil, fresh (chopped)
1/4 tsp Salt
1 dash Granulated sugar (a pinch)
1 cup Navy beans, canned (low sodium; rinsed & drained)
10 cup Pasta, Rigatoni, whole wheat, dry
8 cup Swiss chard (chopped)
2/3 cup shredded Mozzarella cheese
1/4 cup Parmesan cheese, grated

Instructions


  1. In large skillet, heat oil over medium-high heat; sauté sausages, breaking up with spoon, until browned, about 8 minutes.
  2. Stir in garlic and hot pepper flakes; cook for 2 minutes. 
  3. Add tomatoes, basil, salt and sugar; bring to boil. Reduce heat and simmer for 20 minutes, then stir in beans. 
  4. Meanwhile, in large saucepan of boiling salted water, cook pasta until still slightly firm in centre, about 8 minutes.
  5. Drain and return to pot, reserving 1/2 cup (125 mL) cooking liquid.
  6. Add sauce, reserved cooking liquid and Swiss chard; toss to coat.
  7. Transfer to 10-cup (2.5 L) glass baking dish.  Sprinkle with mozzarella and Parmesan cheeses; cover with greased foil.
  8. Bake in 375°F (190°C) oven for 20 minutes.
  9. Uncover and bake until bubbly and browned, about 10 minutes.
