Garlic scapes are similar to scallions, but very distinct in their mild garlic flavor. They are a real treat because they only grow in the early summer!
Ingredients
1 bunch
Garlic scapes
(washed and chopped into 1 inch pieces)
1 tbsp
Ghee
(can sub for butter or oil)
4 date pitted
Medjool date
(chopped)
1/4 cup
Walnuts
(chopped)
1 pinch
Himalayan sea salt
1 dash
Black pepper
Instructions
Heat a frying pan over medium heat and add in 1 tbsp of ghee once warm
Add garlic scapes into the frying pan and saute for 5 minutes, adding a dash of water from time to time if the pan is too dry
Once the garlic scapes are tender, add in the chopped walnuts, dates, salt and pepper. Saute for another 2 minutes and remove from heat.
