Savory Turkey & Sweet Potato Hash

Ingredients


2 tsp Extra virgin olive oil
medium Yellow onion (chopped)
1 medium pepper(s) Green bell pepper (chopped)
2 medium potato(es) Sweet potato (peeled, chopped)
454 gm Ground turkey, lean
2 clove(s) Garlic (finely chopped)
1 1/2 tsp Thyme, fresh
pinch Sea salt (to taste)

Instructions


Heat oil in medium skillet over medium-high heat.

Add onion, bell pepper, and sweet potatoes. Cook, stirring frequently for 8-10 minutes, or until onion is translucent and sweet potato is tender crisp.

Add turkey; cook, stirring frequently, for 5-6 minutes or until turkey is cooked through and sweet potato is soft.

Add garlic and thyme. Season with salt and cook, stirring frequently for 1 minute.

*Yellow, Red and 1/2 Green Container

 

To make AIP friendly substitute Green Bell Pepper with Green Beans.

Notes:

Omit peppers for an AIP version
