2 medium Egg
2 tbsp Olive Oil, Extra Virgin
2 tbsp Yellow onion
1 tsp Garlic (minced)
1/4 cup Red bell pepper
1/2 cup White mushrooms
1/4 cup Grape tomato (s)
1 tbsp Salsa, ready-to-serve
1 wrap raw tortilla/wrap, live, sundried tomato (optional)
1/2 cup Spinach

Instructions


Add olive oil, onion, garlic, chopped bell pepper, mushrooms, and tomatoes to a pan; sauté until tender. Scramble eggs and add to the same pan; stirring until cooked. Can eat over spinach/mixed greens or can add to a whole grain wrap. Enjoy! 

~Option to add cheese or bacon for variety.
