This Easy Mint Fudge Recipe is naturally colored with a secret ingredient and loaded with healthy ingredients, plus it's dairy and sugar free too.
Ingredients
1 1/2 cup

Coconut oil
((use expeller-pressed if you wish to avoid coconutty flavor))

1 1/4 cup
|
Pumpkin seed butter
(or any nut or seed butter; gives green colour)

8 tbsp
|
Swerve Sweetener, granular
(1/2 cup, or any equivalent sweetener to taste; reduce the amount if using stevia extract.)

Parsley, dried
(1/2 cup, or more; gives green colour)

2 tsp
|
Vanilla extract, pure

1 tsp
|
Peppermint extract
|
1/4 tsp
|
Sea Salt
|
1/4 cup

Dark chocolate
(sugar free; optional; for drizzle)

Instructions
- Melt coconut oil in small saucepan. Add remaining ingredients to blender, add coconut oil and blend until smooth.
- Pour into an 8x8 baking pan and freeze until solid (about 2 hours).
- Store in refrigerator to prevent softening.
