Ingredients


681 gm Chicken breast, skinless (organic; (chopped into 1/2 inch pieces))
4 cup Broccoli florets
1 cup Cashew nuts, salted (raw)
2 medium pepper(s) Red bell pepper (diced)
2 cup White mushrooms (sliced)
2 medium Zucchini (chopped)
3 tbsp Soy sauce ((coconut or liquid aminos also work))
2 tbsp Apple cider vinegar
3 tbsp Olive Oil, Extra Virgin
3 tbsp Honey
1 tsp Garlic (minced)
3 cup Brown rice, short-grain, cooked

Instructions


  1. Preheat the oven to 400 degrees
  2. Put chicken and vegetables onto a large baking sheet. Spread evenly
  3. In a bowl, mix the soy sauce, apple cider vinegar, olive oil, honey, and garlic. Pour the mixture over the chicken and vegetables and mix everything together. I like to use my hands!
  4. Place the sheet pan in oven and bake until the chicken is fully cooked. About 30 minutes
  5. If serving with rice, prepare as directed on package while the chicken and vegetables cook
  6. Top rice with cashew chicken, add extra soy sauce if desired, and enjoy!
