This simple burrito is sure to make your morning quick, easy, and efficient!
Ingredients
1 spray (about 1/3 second)
Olive oil cooking spray
2 large
Egg
(cracked and beaten; can sub with egg whites)
1 tbsp
Almond milk, unsweetened
(can sub with water)
1/2 cup
Spinach
1/4 cup shredded
Mexican cheese blend
1/4 cup
Salsa, ready-to-serve
1 small tortilla(s)
Tortilla, corn
Instructions
Spray a bowl or mug with cooking spray. Add the spinach and microwave for 30 seconds.
Remove from the microwave and add the eggs and milk or water, stir. Season with salt, pepper, and any other spices. Microwave for 1.5-2 minutes until fluffy.
Add the egg mixture to the tortillas and top with cheese and salsa. Enjoy!
Notes:
Optional: Add mashed beans to the tortilla and microwave for 30-60 seconds until warmed for a protein and fiber boost.
Sub cheese for avocado slices, add plain greek yogurt for "sour cream", top with fresh cilantro
