4 medium | Zucchini (cut into circles) |
1 medium pepper(s) | Red bell pepper (chopped or sliced) |
1 medium | Red onion (diced) |

1 tsp, ground | Thyme, dried |
1 tsp | Oregano, dried |
1 dash | Salt and pepper |
1. Over medium-high heat, melt ghee in a large skillet.
2. Add onions, peppers and zucchini to the skillet, cook until soft, about 5 minutes.
3. Add tomatoes and seasonings and cook for 1-2 minutes until warm.
