3 tbsp Green curry paste (Thai red; (see notes))
1 tbsp Soy sauce ((gluten-free; if needed. Coco aminos for paleo and Whole30))
1 tbsp Cane sugar (palm; coconut; (or sub maple syrup or brown sugar. Omit for Whole30))
1 tbsp Ginger root (minced)
1 tbsp Fish sauce (see notes))
3 clove(s) Garlic (minced)
454 gm Chicken thighs, boneless, skinless (each thigh cut into bite-sized pieces)
1 squash Kabocha squash (large; cut into 1-inch cubes (or 1 small butternut squash))
1 medium Yellow onion (chopped)
1 pepper(s) Green chili pepper (also chile or chilli) (if you like extra heat)
1 can(s) (13.5 oz) Coconut milk, sweetened
1 bunch Kale (of; torn into small pieces (roughly 2 packed cups))
1 sprig Cilantro (coriander) (Optional)

Homemade Peanut Sauce

3 1/8 tbsp Peanut butter, smooth
2 tbsp Soy sauce
3/4 tbsp Sesame oil (toasted or dark))
1/3 tbsp Peanut oil
3/4 tbsp Rice vinegar
1/3 tbsp Chili paste, Gourmet Garden (or sambal oelek)
3/4 tbsp Honey
1/3 tbsp minced Ginger root
1/3 clove(s) Garlic (minced)
1 1/2 tbsp Water

Instructions


  1. Place all the ingredients, except for the coconut milk and kale, into your crockpot and stir together well. Set your crockpot to cook on high for 4 hours.
  2. After 4 hours, stir in the coconut milk kale and let it sit while you prepare the rice to serve.
  3. Top with a little cilantro, lime, and, if you like it extra spicy, some chopped chili peppers.
  4. Serve with salad and rice.

Instructions for "Homemade Peanut Sauce"

  1. Blend all the sauce ingredients together in a small blender or food processor until smooth and creamy.
