908 gm | Atlantic salmon, wild (in fillets, about 1.5" thick) |
1 1/2 tbsp | Olive Oil, Extra Virgin |
1 tsp | Salt (to taste) |
1 tsp | Black pepper (to taste) |
Preheat oven to 275 degrees. Place salmon skin side down in an ovenproof pan. Brush with olive oil. Roast uncovered until it flakes with a fork, about 25-30 minutes. Season it with sea salt and black pepper. Do not allow it to overcook. Serve warm or at room temperature on top of a salad. If you make one day ahead, refrigerate and bring to room temperature before serving.
