1. Using a small saucer on the stove, bring 2 cups water to boil. Add 2 tablespoons of vinegar. Then adding one egg at a time cook the egg to your preference. Use a draining ladle to remove the poached egg before adding the next one.
For quick, no mess poached eggs try using the microwave:
Use a small to medium sized microwaveable bowl, adding hot water about 2/3 of the way up and a tablespoon of vinegar.
- Add the eggs individually: Microwave for 45 seconds (soft middle) or 60 seconds (hard) . Remove with a draining ladle.
-Add the eggs together: Microwave for 60-70 seconds (soft middle) or 90-110 seconds (hard) .
Remove with a draining ladle.
2. Smash the avocado onto the toasted bread, add the eggs and season as required.
