Heat 1 tablespoon of water in a sauce pan at med-low temperature, sauté the chopped onions together with the minced ginger and garlic with a lid on top. Sauté until golden-brown.
Add snow peas, chopped tomatoes without peel, finely chopped spinach, spices, salt and remaining water. Let it cook at low heat for 1 hour, mixing sometimes and adding hot water when it starts to stick to the bottom of the saucepan.
Serve with quinoa or whole grain brown rice for a complete meal.
