2 breast Chicken breast, boneless, skinless
2 cup Baby spinach (chopped)
1 small White onion (finely diced)
12 olive(s) Kalamata olives (Peleponnese Gourmet Black Pitted Kalamata Olives, chopped)
1 whole lemon(s) Lemon juice
2 tbsp Mayonnaise

Instructions


  1. Preheat oven to 400ºF.
  2. Place chicken on a foil-lined sheet pan and roast for 25-30 minutes or until the internal temperature reaches 165ºF.
  3. Remove from oven and set aside until cool enough to handle.
  4. Shred the chicken breasts using a fork and place in a large bowl.
  5. Add spinach, onions, olives, lemon juice and mayonnaise.
  6. Mix until thoroughly combined, cover tightly and chill.
  7. Serve on your favorite gluten free bread or on a bed of greens.

Notes:

Tip:

For an easy healthy swap, substitute equal parts yogurt for mayo.
