2 cup | Spinach |
1/4 cup | Snacks, trail mix, regular (Just use a handful) |
1 small | Orange (peeled) |
1/4 small | Red onion (diced - can sautee to soften flavour) |
1 tbsp | Balsamic Vinaigrette (to taste) |
1/4 cup | Dried goji berries |
1. Add spinach, chop slightly and crinkle in hands to gently massage. Place on a side plate as the base.
2. Sprinkle on trail mix, red onions (feel free to cook them slightly) and orange slices.
3. Top with dried goji berries and dressing of choice (see notes). Enjoy!
Quick Tips:
It goes really well with a vegan ranch to balance out the flavours but a balsamic vinaigrette goes nicely as well to offset the citrus. Really nice with a sprinkle of plant-based cheese!
