1. Wash, peel and dry beets. Use a spiral slicer to turn your beets into noodles. Alternatively, you can purchase spiralized beets from the ready-made section available at many grocery stores.
2. To make dressing, simply blend lemon juice, garlic, ginger, tamari soy sauce, stevia, olive oil and brazil nuts in a high speed blender until smooth. This is enough for 1 serving.
3. Place your spiralized beets in a large bowl and drizzle the dressing on top. Mix well to combine and garnish with avocado, sesame seeds and cilantro.
