1 tbsp Olive Oil, Extra Virgin
1 cup Yellow onion (diced)
2 clove(s) Garlic (minced)
2 cup Kale (chopped)
1 can (15oz) White kidney beans, canned (with liquid)
947 ml Vegetable stock/broth, low sodium
1 cup Frozen green peas (or canned)
2 cup Zucchini (chopped)
1/4 cup Parsley, fresh (chopped)
1 whole lemon(s) Lemon juice
1/4 cup Basil, fresh (chopped)
1 tsp Salt (kosher)
1/2 tsp Black pepper

Instructions


  1. Place a large stockpot on medium-high heat, add in olive oil.                    
  2. Add onions, garlic and kale, and cook for several minutes, stirring frequently.                    
  3. Add white beans, vegetable stock, peas, zucchini, parsley, lemon, basil, and season with salt and pepper to taste.                        
  4. Simmer for 10 to 20 minutes, or until zucchini is tender.
  5. Serve warm
