Spring Pea Soup with Mint

Fresh farmers' market peas are gently simmered with aromatics and blended with fresh herbs to create this gorgeous, bright-green pea soup!

Ingredients


1 tbsp Olive Oil, Extra Virgin (extra-virgin; plus more for garnishing)
3 medium leek(s) Leek (thinly sliced)
2 medium stalk(s) Celery (thinly sliced)
2 clove(s) Garlic (minced)
6 cup Green peas, raw (shelled fresh)
4 cup Vegetable stock/broth, low sodium
1/4 cup Parsley, fresh (leaves, plus more for garnishing)
1/4 cup Mint, fresh (leaves, plus more for garnishing)
1/4 cup Chives (chopped; plus more for garnishing)
1/4 cup Dill, fresh (sprigs, plus more for garnishing)
1/4 cup Heavy cream, 38% M.F.
1 dash Salt and pepper (Kosher; freshly ground, to taste)

Instructions


  1. In a large pot, heat the olive oil over medium heat. 
  2. Add the leek and celery; sauté until translucent, about 5 minutes.
  3. Add the garlic and sauté until fragrant, about 1 minute more.
  4. Stir in the peas and mix well to combine. 
  5. Add the broth and bring the soup to a simmer over medium-low heat. Cover and simmer for 20 minutes. 
  6. Add the parsley, mint, chives, and dill to the soup, then remove the mixture from the heat and let it sit for 5 minutes. 
  7. Transfer the soup to the bowl of a food processor or blender and blend until smooth. 
  8. Pour blended soup back into the pot and stir in the heavy cream. Season with salt and pepper. 
  9. To serve, ladle the soup into bowls, drizzle with olive oil and garnish with parsley, mint, dill, and chives.
