Steak Salad with Lemon Walnut Vinaigrette

Ingredients


86 gm Beef, inside round steak, lean
1 whole lemon(s) Lemon juice
1 tbsp Extra virgin olive oil
2 tsp Walnuts
1 tsp Dijon mustard
3 cup Baby spinach (or greens of choice)
1 roll Dinner roll, whole wheat

Instructions


  1. Grill steak until it reaches your desired level of doneness (see notes for temperature ranges). Set aside for about 15 minutes to allow for proper juice redistribution.
  2. Next, add the lemon juice, olive oil, walnuts, and Dijon mustard to a food processor, pulsing until smooth.
  3. Place spinach in a mixing bowl, toss with the lemon walnut vinaigrette.
  4. Cut steak into slices, add to the salad and toss once more before serving. Alternatively, dish out the salad and serve the steak slices over top.
  5. Serve with a dinner roll and enjoy! 

Notes:

Steak Doneness: 

  • Rare - 130 to 140F
  • Medium Rare - 145F
  • Medium - 160F
  • Well Done - 170F
