Ingredients


2 cup Steel cut oats, dry
2 medium Banana (s) (mashed)
2 tbsp Peanut butter, natural

Instructions


  1. Preheat oven to 350°F. Line baking sheets with parchment paper. Set aside.
  2. Blend oats (steel cut) until fine. ( Do not expect it to be fine as processed flour)
  3. In a medium mixing bowl, combine oats, mashed banana and peanut butter until well combined. (Stir in raisins if you'd like)
  4. Scoop 1.5 tablespoon portions of dough onto prepared baking sheets.
  5. Bake for 15-20 minutes or until cookies are set and starting to turn light brown on top.
  6. Store in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
