2 tsp Extra virgin olive oil
1 medium Yellow onion
1 cup chopped Green bell pepper
3 clove(s) Garlic (minced)
1 tbsp Tomato paste, organic (.)
454 gm Italian sausage, turkey (ground beef/chicken/turkey)
1 tbsp Chili powder
1 tsp Oregano, ground
1/2 tsp Garlic powder
1/4 tsp Cayenne pepper
1 tsp Salt (Kosher)
1 tsp Black pepper
4 cup Sweet potato ((4)large sweet; peeled and cubed into 1" pieces)
3 cup Chicken broth (stock) (organic)
1 can(s) (14oz) Diced tomatoes, canned
1 can (15oz) Black beans, canned ((optional) drained)
1/4 cup Parsley, fresh (Freshly chopped; for serving)

Instructions


  1. In a large pot over medium heat, heat oil. Add onion and bell pepper and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more, then add tomato paste and stir until well coated. Add sausage and cook, breaking up meat with a wooden spoon until no longer pink, 7 minutes. Add chili powder, oregano, garlic powder, and cayenne and season with salt and pepper. 
  2. Add sweet potatoes, black beans, broth, and tomatoes and bring to a boil. Reduce heat and let simmer, covered, until sweet potatoes are tender, about 15 minutes. 
  3. Garnish with parsley before serving.
