4 large tortilla(s) | Whole wheat tortilla |
2 cup | Baby spinach (for topping) |
1/2 cup | Salsa, ready-to-serve (for topping) |

Sauté onion, black beans and tomato in pan. Add spices. Add cubed sweet potato. Bring to a simmer.
Scoop the sweet potato filling into tortilla shells (warmed in the oven) and sprinkle on your favourite toppings.
