Sweet Potato Toast & Tuna

Ingredients


1/4 small potato Sweet potato
1 tbsp Mayonnaise, low fat (or veganaise)
1 tbsp Pickle relish, sweet
0.12 small Red onion (diced)
82 gm Salmon, chum (keta), canned, drained solids with bone, unsalted

Instructions


Slice sweet potatoes lengthwise into 1/4 inch slices. Add to the toaster like you would bread and toast on high. It may take 2 rounds to get it cooked with a little bit of browning on both sides.Add mayonnaise, relish, diced red onion to a half can of salmon. Scoop tuna onto toast and enjoy!

Notes:

Additional Toppings

  • Top with avocado slices and fresh tomato

No Relish

  • Use mustard
