Make lunch fun again with these crunchy Chicken Thai Peanut Wraps!
Ingredients

Ground turkey, extra lean
(or ground chicken or leftover chicken breasts, shredded or cut into strips)
2 tbsp
Rice vinegar
(for sauce)
1 tbsp
Soy sauce, low sodium
(for sauce)
1 tbsp
Lime juice (fresh)
(for sauce)
1 tbsp
Honey
(or maple syrup; for sauce)
1 tsp
Garlic
(minced; for sauce)
1/4 cup
Peanut butter, smooth
(for sauce)
1/2 tsp
Red pepper flakes
(crushed; optional; for sauce)
4 cup
Red cabbage
(shredded)
1 1/2 cup grated
Carrots
1/2 cup
Cilantro (coriander)
(fresh; chopped)
1/2 cup
Green onion
(chopped)
1/2 cup
Peanuts
(honey-roasted)
5 large tortilla(s)
Whole wheat tortilla
Instructions
Cook ground turkey until no longer pink and cooked through.
In a small mixing bowl, add the rice vinegar, soy sauce, lime juice, honey, and garlic. Whisk until well combined. Add the peanut butter, salt, and red pepper flakes. Whisk until smooth.
In a large bowl, combine the shredded cabbage and carrots, red bell pepper, cooked and shelled edamame, green onions, cilantro, and peanuts. Toss until well combined.
Spoon the vegetable mixture down the centre of the wrap, then add the ground turkey.
Drizzle the Peanut Sauce over top, then fold in the ends and roll up the wraps. Cut in half before serving and enjoy!

Quick Tips:
Time savers: replace the shredded cabbage with a bag of coleslaw mix, instead of grating the carrots yourself, buy matchstick carrots, buy minced garlic instead of using a garlic press, and make the sauce and refrigerate the night before
If making ahead of time to eat later, pour some of the Peanut Sauce into a small to-go container and add just before serving to prevent the wrap from getting soggy.
