1 bun | Hamburger bun, multigrain (Kamut, 1% Gluten, Burger Bun from Tara) |
1/2 avocado(s) | Avocado |
1/4 small | Tomato (sliced) |
1 1/2 tsp | Tomato ketchup |
1/4 cup | Spinach |
1) toast burger bun
2) when bun is toasted spread burger bun top with avocado, add salt and pepper to taste
3) spread bottom of bun with ketchup
4) place spinach on top of ketchup and prepared tofu scramble (see recipe) on top of spinach.
5) Finally top with tomato slices and top of bun.
6) enjoy on it's own or with a side salad.
*you can warm the scramble mixture up if you'd prefer or keep it cold.
