2 tbsp Olive Oil, Extra Virgin
1 onion(s) Sweet onion (skin removed and chopped)
4 clove(s) Garlic (minced)
454 gm Ground turkey, extra lean
4 medium stalk(s) Celery (chopped)
1 can (28oz) Whole peeled tomatoes, canned
2 tsp Italian herb seasoning (I used FreshJax Brand (link below for discount))
8 cup Vegetable stock/broth, low sodium ((64 oz))
454 gm Spinach (chopped)
341 gm Pasta, Gnocchi (whole grain if possible! or you can use a cooked whole grain of your choice)
1/2 tsp Black pepper

Instructions


  1. In a large pot, lightly coat the bottom with olive oil. Over medium heat sauté onions, celery and garlic until onions begin to become translucent. Add in the ground turkey and sauté for 3-5 minutes breaking up the chunks with your spoon and allowing to brown slightly.
  2. Pour tomatoes and their juice into the pot with the Italian seasoning and vegetable broth. Bring to a boil then reduce the heat to low. Allow soup to simmer. As the tomatoes soften, break them up with a wooden spoon. Stir in fresh cracked black pepper and ground turmeric, allow to simmer for 10 minutes.
  3. Add in the gnocchi and spinach. Cook until gnocchi floats and spinach is lightly wilted. 
  4. Spoon into bowls, allow to cool slightly and enjoy!
