57 gm Green onion (chopped)
2 clove(s) Garlic
2 tsp Yellow mustard
22 gm Parsley, fresh (chopped)
114 gm Dill pickles
1/2 tbsp Hot pepper (chili) flakes (optional)
2 tsp Salt and pepper
454 gm Beef, ground, lean
1 large Egg
284 gm Halloumi cheese, Wegman's (or avocado slices for dairy-free)
2 tbsp Cajun seasoning
1 tbsp Coconut oil (+ 1 tbsp, just for cooking)
4 large leaf (s) Iceberg lettuce
1 large Beefsteak tomato
2 tbsp Sour cream, 14% M.F. (or Primal Kitchen mayonnaise for dairy-free)
22 gm Basil, fresh
1 tbsp Lemon juice
1 tsp Salt and pepper

Instructions


GET READY: ingredients out • food processor, bowl blade • baking sheet, lined with baking paper • large skillet •

GET SET: pre-heat oven to 350 °F (180 °C) • skim read instructions before you begin •

GO! :: Instructions

  1. For The Burgers: throw all of the burger ingredients (a part from the meat and egg) in your food processor and whiz to chop. 
  2. Add to a large bowl with the ground beef and egg and use your hands to mix together until well combined. 
  3. Divide the mixture into 4 patties, place on lined oven tray and bake in the oven for 20 mins.
  4. For The Basil Sauce: add the fresh basil to a pestle & mortar and mash until softened then add the sour cream, lemon juice, salt and pepper and mix together with a fork, set aside.
  5. For The Fries: meanwhile, using a sharp knife, cut the halloumi into fries and coat in the cajun spice. 
  6. Heat coconut oil in a large skillet until hot and add the halloumi (they want to sizzle). Cook for 5 mins until crisp and golden, then drain on kitchen paper.
  7. To Serve: slice each side of the iceberg lettuce so you’re left with a square centre - the sliced rounds create the burger “buns” so you need to you have 8 rounds. Serve up the 4 burger patties on lettuce “buns” topped with a slice of tomato and a dollop of the Basil Sauce. Add halloumi fries to the side & enjoy!


DAIRY-FREE: substitute the sauce for keto mayonnaise & the halloumi for avocado

Dairy-free alternative: instead of halloumi fries you can follow the same instructions using avocado wedges - yum!
