Valentine's Day Pomegranate Cookies

Ingredients


3/4 cup Tigernut flour
1 cup Cassava flour
1/2 tsp Sea Salt
3/4 tsp Baking soda
2 tsp Gelatin dry powder, unsweetened (or sub agar agar)
3/4 cup Ghee (or coconut oil)
1 tbsp Vanilla extract, pure
1/4 cup Honey (or maple syrup (to taste))
2 tsp Apple cider vinegar
1/2 cup Coconut oil ((slightly softened, but not liquid))
1/2 cup Coconut cream ((slightly softened; but not liquid) or solid; scooped from chilled can))
2 tsp Vanilla extract, pure
1/2 cup Tapioca starch (or arrowroot starch (add more if icing seems too liquid))
1/4 cup Honey (or maple syrup)
1/2 cup Pomegranate (seeds for decorating)

Instructions


  1. Preheat oven to 350 degrees Fahrenheit
  2. Mix cookie ingredients together, in order listed.
  3. Roll out on floured parchment paper to about ¼ inch thickness. Cut out heart shapes and place on parchment-lined baking tray.
  4. Bake for about 10-12 minutes, until cookies have browned.
  5. While cookies are baking, beat icing ingredients together with electric mixer until icing forms. Taste and adjust sweetener/flavoring as needed.
  6. Once cookies have cooled, ice and decorate with pomegranate seeds.
