Preheat the oven to 350°F and grease a muffin pan or line it with muffin cups.
In a medium bowl mix together ground chia seeds and water to make a chia egg. Let sit for 5 minutes to congeal.
In a large bowl mix together spelt flour, cinnamon, baking soda and salt.
Once the chia eggs become gel like, add the honey, coconut oil, vanilla and mashed banana and stir until mixed.
Add the wet ingredients to the dry ingredients and stir until almost combined. Fold in the apples and mix until combined.
In a medium bowl mix together the topping ingredients to form a crumbly mixture.
Evenly spoon the dough into the muffin pan and top it with the crumble topping.
Bake the apple cinnamon muffins for 20 minutes or until a tooth pick inserted in the centre of the muffins comes out clean.
