An easy option to throw together as a lunch or to use as a balanced snack box for a day where you're on the go!

Ingredients


4 medium pepper(s) Red bell pepper (Cut in half, seeds scooped out and quartered)
1 cup Hummus
2 cup Blackberries (washed and air dried)
2 cup Strawberries (washed and air dried)
2 cup Tortilla chips, plain, white corn, salted (or try black bean tortilla chips)
1/4 cup Almonds, raw
1/4 cup Cranberries, dried
2 tbsp Sunflower seeds
2 tbsp Pumpkin seeds (pepitas)

Instructions


  1. Stuff the bell peppers with hummus (or serve hummus on the side).
  2. Mix together the trail mix ingredients (almonds, dried cranberries, sunflower seeds and pumpkin seeds).
  3. Divide all ingredients between four 3-compartment storage containers. Store in the fridge for up to 4 days.
