Slice eggplant into thin strips, a mandolin will make that easier but I did it by hand 🤚

Salt the eggplant strips to let them sweat while you prepare the filling.

You can put whatever you want as the filling. In this sample we put thin strips of potatoes 🥔, some spinach, red onion, and tomatoes 🍅.

Roll up your ingredients and place on a baking sheet. Top with more tomatoes and herbs like oregano, parsley, thyme. A pinch of sea salt and pepper! ✅

Bake at 350 for about 30-40 minutes. That will depend on your choice of filling. 👌🏼

For the creamy sauce we blended cashews, garlic, turmeric, a pinch of black pepper and some sea salt.

Pour sauce over baked eggplant and serve 💚
