These plant-based smoky and savory sloppy Joes will WOW the whole family and only take 30 minutes to prepare from start to finish!
Ingredients

Green lentils, raw
4 cup
Water
1 medium
Yellow onion
(diced)
1 medium pepper(s)
Green bell pepper
(chopped small)
2 clove(s)
Garlic
(minced)
2 tbsp
Chili powder
2 tsp
Paprika, smoked
1 can(s) (15oz)
Tomato sauce, canned
(reduced-sodium)
2 tbsp
Tomato paste, canned
3 tbsp
Yellow mustard
2 tbsp
Maple syrup
(pure)
1/4 tsp
Salt
(or to taste)
4 bun
Hamburger bun, multigrain
(whole wheat, for serving)
Instructions
Add the lentils and water to a medium pot with a lid. Bring to a boil, then lower heat and simmer for 18-20 minutes or until tender. Drain excess liquid and set aside.
Meanwhile, prep your vegetables and open the cans of tomato sauce and paste.
Heat a large skillet over medium heat. Once hot, add the chopped onion, green bell pepper, and minced garlic. Use a few tablespoons of water, or vegetable broth, to saute and prevent burning. Stir constantly for 3-4 minutes, using more water as needed.
Now add the chili powder and smoked paprika, and stir to coat the vegetables for about 1 minute. Add a little water if it's too dry.
Next, add the tomato sauce, tomato paste, mustard, and maple syrup. Stir until well incorporated. Add in the cooked lentils and stir. Season with salt to taste.
Serve on burger buns with red onion slices, lettuce, and tomato, if desired, or enjoy open-faced!
