Add oil to sauce pan and saute oil, garlic, onion, celery, bell pepper, cilantro stalks and chili for 5mins or until soft.
Add tomatoes, all beans, corn, grated zucchini and heat through.
Add lime juice and garnish with cilantro and dressing (optional).
