1 tbsp chopped | Yellow onion |

1 tbsp | Basil pesto |
1 dash | Black pepper |
1/2 cup | Spinach (chopped) |
2 tbsp | Cotija cheese, Cacique |
1 slice | Whole grain bread (toasted, optional) |
1. Sauté the onions in the olive oil for several minutes, or until they become translucent.
2. Meanwhile scramble the eggs with the pesto, 1 tsp. of water and some fresh pepper.
3. Add the eggs to the onion. Halfway through cooking, add the spinach. Remove from heat, mix in the cheese and serve.
4. Optional to have with 1 piece of toast with butter or ¼ avocado spread.
