1 tsp Balsamic vinegar
dash Black pepper (ground)
1/4 tsp Garlic (minced)
1 tbsp Lemon juice
29 gm Mozzarella cheese, partially skimmed (cubed)
1 tsp Olive Oil, Extra Virgin
2 tbsp Parsley, fresh
1 dash Thyme, dried
1/2 cup cubes Tofu, silken, extra firm
1/4 cup chopped Tomato
1/2 cup White beans, canned
2 tbsp chopped Yellow onion

Instructions


In a large bowl, combine beans, cubed tofu, tomatoes, onions, parsley, and cubed cheese.

In another bowl, mix oil, vinegar, lemon juice, minced garlic, thyme, and ground black pepper. Add to bean mixture and toss.
