1 cup Wheat flour, whole wheat
1/2 cup Cocoa powder, unsweetened
1/2 tsp Baking powder
3/4 tsp Baking soda
1/4 tsp Salt
1 cup Zucchini (grated, packed)
1/3 cup Avocado oil
1/4 cup Greek yogurt, plain, fat-free
1/2 cup Granulated sugar
2 large Egg (room temperature)
1 tsp Vanilla extract, pure
3/4 cup Dark chocolate chips

Instructions


  1. Preheat the oven to 350°F and line a loaf pan with parchment paper.
  2. Combine the whole wheat flour, cocoa powder, baking soda, baking powder, and salt in a large bowl and set aside.
  3. In a medium-sized bowl, whisk together the yogurt, oil, sugar, eggs, and vanilla extract. Then, fold in the grated zucchini.
  4. Stir the wet ingredients into the dry ingredients with a spatula, but do not overmix.
  5. Fold the chocolate chips into the batter and save some to sprinkle on top once you have poured the batter into the pan.
  6. Pour the batter into the prepared baking pan and sprinkle the chocolate chips over the top.
  7. Bake for 40-50 minutes or until a toothpick inserted into the center of the loaf comes out clean.
  8. Allow the loaf to cool in the pan for 10 minutes.
  9. Remove the loaf from the pan and place it on the wire rack to finish cooling.
  10. Slice and enjoy.
