Instructions
- Heat the oil in a pan over a medium heat, saute the diced onion and sliced garlic until translucent and fragrant
- Add the spinach, and season with salt and pepper. Pop the lid on and cook on low for 1 minute.
- Crack eggs on top, cover lid and cook until desired doneness, about 5 minutes.
- Plate and serve.
