2 medium Zucchini
1 cup Basil, fresh
1 tbsp Lemon juice
1/4 cup Sun-dried tomatoes
1/2 tsp Salt
1/2 tsp Black pepper

Instructions


With a spiralizer, mandolin, or peeler – cut the zucchini into long noodle shaped pieces and set aside


Place all ingredients (including zucchini) in a bowl. Stir in sundried tomatoes. Toss with approved dressing and serve.
